Nothing in the pantry?

Are you sure the cupboard is truly empty? When most people look in the pantry, they pick up the things in pretty packages first. If they can’t see any of their favorite instant food to snack on, they immediately declare that the cupboard is bare. It’s called ‘Ingredient Blindness’. It’s a common illness across most of the developed world, where people’s eyes skim over simple plain-colored ingredients such as flour, sugar and rice. They simply don’t see them, let alone see them for what they are. These boring looking packages all contain valuable ingredients which will help you make dozens of yummy, filling dishes. They will help you get through your challenge – if only you use them. When you take all these basic food items into consideration, can you honestly say… that your cupboard is bare? Fortunately, overcoming ingredient blindness is easy. All you have to do is be a little flexible.

Today is also my day to spend my 25€ of the ENTERTAINMENT FUND ~ not the grocery fund for our Thanksgiving dinner with friends. Turkeys here in Spain cost about 3 times what it is in the USA. I believe I have most of what I need for the meal but will buy:

  • a turkey
  • potatoes
  • celery

Here’s how one lady did it last year. It’s interesting and I like her practicality although I’m used to cooking from scratch.  At least she’s trying!

Breakfast

Leftover pizza quiche from yesterdays lunch

Lunch

Navy bean soup~ taken out of the freezer

lamb chops~ I found these in the freezer

mashed potato casserole~ I had these packaged up in the freezer after guests came

salad~from my pot in the garden

Dinner

egg salad sandwiches

  • That was a great lunch.

  • I cooked a bone-in turkey breast for Thanksgiving yesterday and forced myself to make turkey soup after Dave carved it up. I *really* didn’t feel like it, but I’m glad I did and it was a good way to use up some random veggies I had.
Keep up the good work mom!

    • Sounds great Rebekah. It IS such a great way to use up the odds & ends and even a handful of rice can be added. I’ve always thought of it as a free meal. I stewed my turkey bones also, then separated the meat from the broth. The meat scraps will be used for rolled tacos and the broth for a soup base, to use as the liquid in making rice or even to cook potatoes or pasta in for extra flavor. I like to put the broth in jars and then in the fridge so the next morning I can skim off all the fat. You are doing a wonderful job Rebekah!
