Our Annual Church Retreat
We struggled with wanting to attend this year and the price to go but were sure glad we did! This retreat was our best yet and John and I had a great time. Here are some photos of our 3 day retreat in Yerbena, Spain… close to Toledo.

Our Church Retreat in Toledo
These are our photos of the weekend retreat we attended with the others from our church family. You can click on each photo to see a larger view. It was so exciting to see these 7 baptisms. We all saved and sacrificed to attend, not just John and me, but also the other church members. It’s been encouraging to see this level of commitment to each other.
Family Times
We were sent some photos of some of our kids and grands and we wanted to share them with you. They were sent to us by Rebekah and Dave and we are thankful that these 3 couples had time together as a family. It really blesses us. Click on the photo for a larger view.
A blast from the past
We thought you might enjoy seeing a really old photo of my sister Sue and me. I know the kids and
grands will like to see their mom/grandma as a little girl and certainly will bring a smile to my parents faces! I have tried to get photos of John as a little guy but they seem to be hard to come by. I will keep trying, I’m sure he was super cute!
By the by, Sue and Rick are a very important part of what we do here in Spain. If you have ever seen an address with Yuma, Arizona on our letters, it’s because they handle much of our state-side mail issues and basically deal with a good part of our paper work. They have sacrificially given of their time and resources to help us work and stay here. That same darling little smile you see on the photo here, Sue still has. She blesses so many!
Old Fashioned Cream Scones
Here’s an economical recipe I’ve been making for about 30 years. It’s a good solution for European style breakfasts and I also serve them at the 6:00pm “merienda” (snack).
Scones
2 cups unsifted regular all-purpose flour
3 teaspoons baking powder
2 tablespoons sugar
1/2 teaspoon salt
4 tablespoon butter or margarine
2 eggs, beaten
1/3 cup heavy cream
2 teaspoon sugar
In a bowl combine the flour, baking powder, 2 tablespoons sugar, and salt. With a fork, cut in the butter until mixture resembles fine crumbs. Stir in the eggs and cream to make a stiff dough.
Turn out onto a lightly floured board and knead lightly until dough sticks together. Divide into two parts. Roll each part out to make a circle about 6 inches in diameter and about 1 inch think. With a knife, cut each circle into quarters, making even wedges. Arrange on an ungreased baking sheet; about 1 inch apart. Sprinkle with the 2 teaspoons of sugar. Bake in a hot oven (400°) for 15 minutes or until golden brown. Serve immediately. Makes 8 scones
*I serve scones with butter, jam and clotted cream or whipped cream.
Clotted Cream:
2 cups pasteurized (not ultra-pasteurized) cream Set a coffee filter basket, lined with a filter, in a strainer, over a bowl. Pour the cream almost to the top of the filter. Refrigerate for 2 hours. The whey will sink to the bottom passing through the filter leaving a ring of clotted cream. Scrape this down with a rubber spatula and repeat every couple of hours until the mass reaches the consistency of soft cream cheese.
Preparation time: 5 minutes Ease of preparation: easy
Old Pet Cemetery?
Last Saturday, four friends from church and I (Bobbie) drove to El Espinar, Segovia to check out the retreat
facilities for both the ladies retreat and the all church retreat we will have in June. Here is a photo of our accommodations.You can see it’s simple… so what does this have to do with a pet cemetery? After our inspection of the facilities, we stopped for our picnic lunch in the first place we saw in the village; it just happened to be the “old pet cemetery”. Good times, good memories, GREAT friends!
