Day #24 food challenge continues… 6 more days…
December 5th, 2011~Monday & I still have 2,74€!
I’ve learned that my meals don’t need to be extravagant.
As I searched my pantry & fridge, I found several cans of tomato sauce, plenty of eggs & rice. At first I thought they might be good for lunches, but then I realized that John would love that Spanish classic meal of rice (with garlic), tomato sauce and a fried egg on top for any meal. That’s not even close to what I usually make for dinner since our dinners are usually the meat-potato-vegetable variety.
But in the spirit of the grocery challenge; not to mention eating less meat, I’ll serve this for dinner one night. It doesn’t seem like much of a dinner, but it will be a hit! Preparation will be quick, our meal will be enjoyable, and clean-up easy too.
I realized that maybe I’ve been making things too hard–and too expensive at the same time! Simple is good.
Day #2 of the new food challenge.
November 13th, 2011~Sunday
We have been so blessed. I really mean it!! We went to a fabulous retreat and they showered us with treats. Very fun! We received among other things:

More garden photos
My little garden has started to produce! I have gotten 5 tomatoes already and we usually don’t harvest those until August. It’s nice to not have to buy veggies. We don’t have a huge variety but
we certainly are enjoying our:
Swiss Chard
Tomatoes
Peppers
Green Beans
The food plan for today, May 5th
Today in the morning we returned to Madrid after a week in Aix en Provence France baby-sitting 3 of our grandchildren, Elijah, Ana and Evangeline. The parents we’re off to a mini holiday in Paris before their 4th baby arrives this summer.
The food plan today looks like this:
Breakfast- we’ll eat at Anita and Neils house in France.
Lunch- a frozen individual pizza I bought for me (372 calories) and cooked and sandwiches for John to be eaten on the plane. It’s a 9:30am flight and is only 1 hr 30 mins. but it’s always nice to eat on the plane… helps pass the time. Flying can be quite boring.
Dinner (supper)- will consist of thawed beef & gravy that was leftover and frozen with some swiss chard from my garden & instant mashed potatoes that I have in the pantry. No dessert.
I’ll also get to check on my hens and see if there are any eggs left. Our neighbors have checked on them and have taken the eggs that they need.
Later… we had 21 eggs waiting for us! What fun!
It looks like we will be able to eat 2 more days of leftovers frozen in the freezer, Friday & Saturday. Sunday we’ll have a guest for our 2pm meal after church and Sunday evening I have a supper meeting that John and I both will attend.
Raiding the Pantry
It’s just great having chickens!! It’s like a gift I receive everyday when I go outside to collect the 3 eggs. 3 chickens=3 eggs.
