An Abundance of Tomatoes & Peppers

Jul 21, 2011 by     2 Comments    Posted under: blessings, Blogroll, food, Gardening, Spain

It’s a good thing we love tomatoes, because this year we have a lot of them. The peppers also have gone wild and we have several varieties. Here are a few uses for the veggies:

    • gazpacho
    • we like to grill our peppers. In Spain they are served traditionally along side a Spanish tortilla.
    • stir fry~ a scrambled egg, a bit of chicken, all the veggies we have in the house: yesterday we had cabbage, peppers, tomatoes,  zucchini, onions, green beans,  garlic and rice. It helps to have some rice vinegar, sesame oil, soy sauce and or oyster sauce.
    • broiled peppers are nice along side a fried egg & toast for a supper in Spain.

My little garden has started to produce! I have gotten 5 tomatoes already and we usually don’t harvest those until August. It’s nice to not have to buy veggies. We don’t have a huge variety but  we certainly are enjoying our:

July 31st, 2010: New TOTAL (so far)

5 kilos 598 grams or  12lbs. 3 oz.

August 3rd, 2010: New TOTAL (so far)

9 kilos 253 grams or 20lbs. 3oz

August 7th 2010: New Total

Lots of Tomatoes!

Man! I have tons of tomatoes on my 24 tomato plants! It looks like this year will be fantastic for canning tomatoes and for making  gazpacho.

here is the status on the other plants:

zucchini- we have eaten about 6 of them so far.

onions- wonderful! and I keep replanting them as I use them.

cucumber- one so far that will end up in my salad tonight.

peppers- lots of them forming and thankfully a good many jalapenos.

lettuce- I have mostly eaten it all and I should have re-planted more  often. I planted some about 2 weeks ago and I try to plant new seeds every couple of days.
